Cassia Gum Powder is known as Caesalpiniaceae is a wild crop that is been found in most parts of India as a weed. It is a natural gelling agent that contains 1-2% volatile cassia oil that is mainly responsible for spicy aroma and taste. Its primary chemical constituents include cinnamaldehyde, gum, tannins, mannitol, coumarins, and essential oils.
